Yields 12 regular size muffins
You will need
- 1 package Eat Up! Chocolate Muffin & Cake Mix
- 1/2 cup vegetable oil
- 4 large eggs, or plant-based egg replacement
- ¼ cup water
Directions
Preheat oven to 375ºF. Lightly whisk eggs and water together. Add oil. Gradually add mix to liquid ingredients and mix until well combined. Spoon batter into lightly greased muffin pan or paper liner cups. Bake until golden brown, about 12-15 minutes, or until a toothpick comes out clean or until a toothpick comes out clean.
