Delicious lemon poppy seed bread using a mixture of Eat Up! Oat Flour and almond flour and naturally sweetened with honey. This bread has an extra bit of protein and healthy fat from whole fat greek yogurt or feel free swap out the yogurt for a dairy-free alternative. Enjoy this one-bowl bread for an easy, healthy breakfast or snack.

You will need


Wet ingredients:

  • 1/2 cup whole fat greek yogurt (or sub a plant-based yogurt)
  • 2 eggs
  • 1/3 cup honey
  • zest from 2 lemons
  • 1/2 tsp almond extract

Dry ingredients:

  • 1 cup Eat Up! Oat Flour
  • 1 cup almond flour
  • 1 tbsp poppy seeds
  • 3/4 tsp baking soda
  • 1/4 tsp salt

Ingredients for Glaze:

  • 1/2 cup powdered sugar
    1-2 tbsp fresh lemon juice

Directions


Preheat oven to 350 degrees. Line an 8×4 loaf pan with parchment paper and spray with non-stick cooking spray to prevent bread from sticking. In a large bowl, whisk together wet ingredients — yogurt, eggs, honey, lemon zest, and almond extract. Add dry ingredients to bowl — Eat Up! Oat Flour, almond flour, poppy seeds, baking soda, and salt. Mix with wooden spoon until well combined and pour into prepared loaf pan. Bak for 35-45 minutes. Allow bread to cool in the pan for 5 minutes and then transfer to a wire rack. Make sure the bread is completely cool before adding glaze.
